I guess we should really start off with the U Can Do IT core syllabus, and work out from there. The core syllabus can be found at UCanWiki:Instructions and Course Notes/Core Syllabus.
I think it would be a good idea to distinguish between step-by-step instructions and more thorough "course notes" which might offer a little background history on a topic, where to download a piece of software, etc (e.g., see the Firefox page). The latter would be better for more advanced students, but the former are also necessary for absolute beginners and students who have difficulty with coping with large pieces of text.
There are already step-by-step instructions for Outlook Express available on the U Can Do IT website: http://www.ucandoit.org.uk/student_zone/the_course/outlook/using_outlook_1.asp. One job would be to put these into the wiki in-line with the course syllabus (click on that link and read the information at the top of the page to see what I mean). Remember that these instructions only work perfectly in Outlook Express 6, so slight changes will have to be made to produce notes for Mac OS and Thunderbird (and any other programs students are using - Hotmail, GMail, etc).
